Description
This research aims to explore the transformation of “family meals” in post-war Taiwanese society from 1945 to 1980. “Family meals” refers not only to the foodstuff and dishes of the meals dining in families but also to the forms of dining. The production, development and transformation of “family meals” are highly related to the social food supply system, family structure, nutritional knowledge and cooking skills. In addition, family meals are also influenced by the economic conditions, occupation structure, and different gender roles in families. By examining the family meals in post-war Taiwanese society, this research will analyze the newly-shaped social food supply system (including the emerging supermarkets, frozen food and cafeteria dishes), changing family structure, gender roles and the influences of new cooking skills/equipment and nutritional knowledge in post-war Taiwan.
