國家、營養與家政：從「飲食基礎建設」觀點對近代東亞學校午餐制度形成與變遷的比較研究

"School lunch" is often developed by the government for reasons such as strengthening the nation's health and social relief, and is linked to home economics and nutrition education, with resources coming from international and domestic relief systems. With economic development, school lunches have gradually been incorporated into the capitalist market economy with the participation of food enterprises. This study places the history of school lunch in Taiwan in the context of the historical development of East Asia in the late 19th and early 20th centuries. It explores how the modernization process and the post World War II U.S. programs in East Asia influenced the policies and development of school lunch in Taiwan, Japan, Korea, and other neighboring East Asian regions, and analyzes the multiple forces of government policy, family values, nutrition, and commercial interests. This research considers "school lunch" as an important part of the public food supply system. From the historical changes of school lunch, it will examine the international politics and operation of the agrifood system, the introduction of nutrition knowledge, the changing roles of family and genders, and how modern food companies have crossed over into the school feeding system. This project takes a "culinary infrastructure" approach to research, and is divided into three major sub-topics: (1) the transformation in the school lunch supply chain from national policy to private enterprise, (2) the establishment and dissemination of nutritional knowledge and institutions, and (3) the establishment of home economics education and changing gender roles. Through the in-depth analysis of these three aspects, this research will explore the historical process of school lunch-related regulations, facilities, the formation of the supply chain and the introduction of private enterprises, as well as the cultural values and gender changes manifested in them, and conduct comparative studies with East Asian countries in similar international situations.
